If you want to really get a grip of the country then the palaces of Madrid are a must-see. The Cybele Palace and Royal Palace are two beautiful old buildings in the centre of the city surrounded by statues and gardens. Local vendors are readily available nearby if you feel like stopping for a coffee or cold drink while you see the old royal housing.
